甘油，也写作丙三醇，是一种三碳醇，每个碳原子上均带有一个羟基，分子式为 C3H8O3，CAS 号为 56-81-5，INCI 名称为 Glycerin。它并非为自身而生产，而是回收所得：任何甘油三酯经皂化、水解或酯交换裂解时都会释放甘油作为联产品，这也是全球供应量取决于制皂和生物柴油产量、而非甘油需求的原因。
小分子上的三个羟基几乎解释了它的全部性质。羟基易于形成氢键，使甘油能与水完全互溶，黏度高且强烈吸湿，可从空气中吸收并保持水分。这种保水能力正是其在护肤中用作保湿剂、在食品中用于保持产品柔软，以及在烟草和药品中使用的基础。同样的羟基使其成为反应性构建单元，可酯化生成醇酸树脂、聚醚多元醇和硝化甘油。其贸易形态包括纯度约 80% 的粗甘油、工业级甘油，以及纯度 99.5% 或以上、符合 USP 和 EP 各论要求的精制级甘油。
该产品用于个人护理和化妆品、药品、食品饮料、烟草、醇酸树脂和聚氨酯、防冻液及工业流体。
