聚甘油，也称polyglycerol，是甘油在碱性催化和真空条件下自身缩合的产物，分子之间通过醚键连接成短链。商品牌号从二聚甘油到十聚甘油不等，为黏稠、色浅、可溶于水的液体或软质固体。
把它理解为「调高档位的甘油」最为贴切。一个甘油分子带三个羟基；一个十聚甘油带十二个，而骨架质量约为前者的十倍。这提高了分子量、黏度和沸点，同时保持甚至增强了对水的亲和力，因此高聚合度牌号的保湿能力强于甘油，却远不如甘油易挥发，也不像高用量甘油那样发黏。从大约四聚甘油往上，HLB超过15，这正是它本身可用作增溶剂和分散剂的原因——在必须避开环氧乙烷化学的配方中，它可以替代乙氧基化增溶剂和珠光剂。不过，绝大部分产量并非以其本体使用：它是制取聚甘油脂肪酸酯（即E475乳化剂族）和聚甘油蓖麻醇酸酯的骨架。牌号比名称更重要，因为聚合度决定了其余一切，必须在订单中写明。
用作个人护理中的保湿剂、替代乙氧基化物的增溶剂和分散剂、黏度与密度调节剂、聚甘油酯乳化剂的原料，以及聚氨酯和醇酸树脂的多元醇。
