椰油酰胺丙基甜菜碱通常缩写为 CAPB，是一种两性表面活性剂，由椰子油脂肪酸与二甲氨基丙胺反应，再以氯乙酸钠季铵化制得。其 CAS 号为 61789-40-0，INCI 名称为 Cocamidopropyl Betaine，通常以活性物含量约 30% 的澄清至淡黄色水溶液形式供应。
两性意味着分子同时带有正电荷和负电荷，其净电荷随体系 pH 而变：在酸性条件下呈阳离子性，在个人护理产品的常规 pH 范围内呈两性离子状态，实际上呈电中性。因此它几乎总是用作辅助表面活性剂，而非主表面活性剂。与月桂醇聚醚硫酸酯钠等阴离子表面活性剂复配时，可形成混合胶束；这些较大的胶束既能增稠配方（加盐后往往增稠明显），又能减少可破坏皮肤蛋白的游离阴离子表面活性剂含量。实际结果是：在相同阴离子基础配方下，泡沫更丰富、增稠响应更好，刺激性明显降低。
