荷荷巴油由 Simmondsia chinensis 的种子压榨而得，该植物是产于美国西南部的沙漠灌木。其 CAS 号为 61789-91-1，INCI 名称为 Simmondsia Chinensis Seed Oil；未精炼形态为清澈的金黄色液体，精炼后则无色无味。
它的决定性特征在于化学结构。几乎所有其他植物油都是甘油三酯，即三个脂肪酸连接在甘油骨架上。荷荷巴油基本上不含任何甘油酯：它由长直链蜡酯构成，即脂肪酸与脂肪醇直接相连，两条链的碳数通常为二十或二十二。由于不存在可水解的甘油骨架，且每条链仅有一个双键，该物质极为稳定。它不会像植物油那样在相同时间尺度内酸败，可耐受反复加热而不聚合，因此无需添加抗氧化剂，保质期以年计。其结构还与人体皮脂相近，这正是它长期用于护肤护发的基础，并被用作抹香鲸油的直接替代品。
