皂脚酸化油以皂脚为原料生产。皂脚是植物毛油在化学精炼过程中用烧碱中和时分离出的碱性副产物。加入硫酸可将皂化物分解为游离脂肪酸，并在酸水层之上分离出油层。成品为深棕色至黑色的黏稠液体，气味强烈。
其决定性的商业特征是波动性。若精炼厂只加工单一油种，酸化油即反映该油种；若加工混合原料，酸化油则是所有经过物料的混合体，组成逐批变化。游离脂肪酸含量通常在 50% 至 90% 之间，其余为中性油、水分、不皂化物、磷脂以及酸解残留的硫酸盐。正因如此，它在脂肪酸价格区间的最低端交易，并且始终按具体批次的分析证书采购，而非按固定规格采购。残留硫酸还使该物料具有腐蚀性，储存和输送需采用耐酸设备。
该产品用于脂肪酸裂解与回收、工业皂与洗衣皂生产、生物柴油酯化、动物饲料能量补充，以及油田、矿业和建筑用化学品。
