大豆酸化油以大豆皂脚为原料生产，皂脚是大豆毛油用烧碱中和时分离出的碱性副产物。用硫酸酸化可将这些皂类分解为游离脂肪酸，并以油状上层析出。产品为深色黏稠液体，属于精炼副产物，而非专门生产的定级产品。
其组成与大豆油一致，以亚油酸为主，并含有相当比例的油酸、棕榈酸和α-亚麻酸。亚油酸含两个双键，α-亚麻酸含三个双键，因此该酸化油碘值较高，不饱和度的反应活性远高于棕榈基同类产品。这正是其化学转化价值的基础：每条链上的多个双键提供了更多环氧化反应位点，而醇酸树脂和涂料所依赖的干燥性能也直接来自这种多不饱和结构。同样的反应活性使该物料在储存中不稳定，容易变深、聚合并产生酸败气味，在温热存放时尤为明显。游离脂肪酸、水分和残留硫酸盐在批次之间存在差异，因此按批次分析结果进行交易。
该产品用于环氧大豆油生产、醇酸树脂与涂料、脂肪酸回收与裂解、工业皂、生物柴油酯化以及动物饲料能量补充。
