己酸是含六个碳原子的短链饱和脂肪酸，分子式为 C6H12O2，CAS 号为 142-62-1。其系统名称为正己酸。它天然存在于山羊乳脂中（其俗名即由此而来），也存在于椰子油和棕榈仁油中，可通过水解裂解和分馏从中回收。
六个碳使其处于挥发性有机酸与真正脂肪酸之间的临界位置，其表现也相应如此。常温下为无色至淡黄色油状液体，部分溶于水，气味强烈而持久，通常被形容为干酪味或膻味。该气味在极低浓度下即可察觉，这使其在香精领域颇具价值，但也要求操作区域具备良好通风并保持严格的清洁管理。由于完全饱和，它化学性质稳定、抗氧化；其反应性集中于羧基，易于形成酯类。
其主要用途是作为酯类的原料。己酸乙酯和己酸烯丙酯是广泛使用的果香型香精香料原料；该酸还用于生产润滑酯、增塑剂、橡胶助剂、金属皂和医药中间体。
