油酸是一种含十八个碳原子、在第九位带有一个顺式双键的单不饱和脂肪酸，分子式 C18H34O2，CAS 号 112-80-1。它通过油脂水解制取，原料主要为棕榈油、豆油、葵花籽油和牛油，再经压榨或溶剂分提将液态部分与固态饱和酸分离。商品油酸并非单一纯化合物，而是按等级划分的混合物，以低凝固点级、一次蒸馏级或高纯级供应。
这个唯一的双键几乎解释了它与其饱和对应物硬脂酸之间的全部差异。顺式双键使碳链产生约三十度的永久弯折，分子因而无法排列成有序晶体。硬脂酸链型笔直、易于堆积，熔点为 70 摄氏度；油酸因带有一处弯折，熔点仅为 16 度，在桶内即为液态。这正是其操作便利性的全部来源，使用前无需熔化。同一个双键也是反应位点，可进行磺化、环氧化、臭氧化制取壬二酸和壬酸，以及二聚生成二聚酸；但它同样是氧化位点，若在高温或通气条件下贮存，酸值制品会变色并产生气味。
其应用包括肥皂与表面活性剂、纺织与皮革加工、金属加工液、润滑剂、二聚酸、醇酸树脂以及个人护理产品。
