棕榈酸是一种直链饱和脂肪酸，含十六个碳原子，分子式为 C16H32O2，CAS 号 57-10-3。其系统名称为十六烷酸，俗名来源于棕榈油——棕榈酸约占棕榈油脂肪酸的 44%。该产品由棕榈油或棕榈硬脂经水解分解并分离饱和组分制得，以白色片状、粒状或粉状供应，熔点约 63 摄氏度。
棕榈酸是自然界中含量最丰富的饱和脂肪酸，其性能源于完全饱和的直链结构。由于不含使碳链弯折的双键，分子可紧密堆积成晶格，因此在远高于室温的条件下仍为坚硬固体；而链长相同但含一个双键的油酸则为液体。同样因为没有双键，氧气缺乏进攻位点，棕榈酸在储存中稳定，高温加工时不会变色发暗或产生气味。在配方中，它提供硬度、不透明度和骨架结构，本身并无表面活性。
用于皂块和洗涤剂块、化妆品膏霜和棒状制品，用作塑料和橡胶的润滑剂与脱模剂，用于金属皂和润滑脂、蜡烛配方，并作为酯类和脂肪醇的中间体。
