Palmitic Acid

Palmitic acid is a straight-chain saturated fatty acid with sixteen carbon atoms, formula C16H32O2, and CAS number 57-10-3. Its systematic name is hexadecanoic acid, and its common name comes from palm oil, in which it makes up roughly 44 percent of the fatty acids. It is recovered by splitting palm oil or palm stearin and separating the saturated fraction, and is supplied as white flakes, beads or powder melting at about 63 degrees Celsius.
It is the most abundant saturated fatty acid in nature, and its behaviour follows from a straight, fully saturated chain. With no double bonds to kink it, the molecules pack into a tight crystal lattice, which is why it is a hard solid well above room temperature while oleic acid, the same length but with one double bond, is a liquid. The same absence of double bonds means nothing for oxygen to attack, so palmitic acid is stable in storage and does not darken or develop odour during hot processing. In products it contributes hardness, opacity and structure rather than any surface activity of its own.
It is used in soap and detergent bars, cosmetic creams and stick products, as a lubricant and release agent in plastics and rubber, in metal soaps and greases, in candle blends and as an intermediate for esters and fatty alcohols.
