    About This Product

    Caprylic acid is a straight-chain saturated fatty acid with eight carbon atoms, formula C8H16O2, and CAS number 124-07-2. Its systematic name is octanoic acid. It is obtained by splitting coconut or palm kernel oil and fractionally distilling the resulting fatty acids, and is supplied as a colourless to pale yellow liquid with a faint, slightly rancid odour.

    Eight carbons is short for a fatty acid, and the consequences run through its properties. It melts at about 17 degrees Celsius, so it is liquid in most working environments, and it has appreciably more water solubility and volatility than longer-chain acids. It is also the chain length at which fatty acids become effective antimicrobials: caprylic acid and its monoglyceride disrupt lipid membranes in yeasts, moulds and some bacteria, which is the basis of its use as a preservative aid. Full saturation means no double bonds and therefore good oxidative stability.

    It is used with capric acid to manufacture medium-chain triglycerides for nutrition, sports products and cosmetic emollients. Other uses include synthetic ester lubricants, plasticisers, flavour and fragrance esters, metal soaps, and antimicrobial systems in feed and personal care.
